Philosophy:
       To express the unique characteristics of a single vineyard site in an exceptional wine.

Vineyard:
      Gradually sloping north facing hill, with iron stone, gravely soils.
     The vine canopy is tucked for maximum bunch exposure, expressing bright berry fruits.

Winemaking:
      Extended cold soaking and gentle maceration, cool fermentation and climate     controlled maturation in tight-grained American and French oak barriques.

Style:
   Amazing vibrancy of colour with a brightness of cherry chocolate and pine needle aromas.
   A fresh palate with rich chocolate, pine needles and layers of plums, basil and spice.
   A very well poised structure with great length.
   Decant when young or age up to 8 years.

When blended as we have done here, they each contribute interesting notes which are precisely balanced in a complex symphony of flavours. The influence of very high quality grapes from old dry grown low yielding vines, fives both power and refinement at the same time.

Extraordinary viticulture has produced the outstanding flavor results reflected in this wine. The blend has both fruit and savoury notes with firm structure to assist bottle ageing.

Tasting Note:  Medium red with purple hue. Lifted spicy aromas of black fruit followed by a mouth filling juicy palate full of dried plum/prune flavours balanced with soft dark chocolate tannins. Lingering flavours of orange rind, prunes and cherries persist.

The berries were machine harvested and then crushed into stainless steel red fermenters with the skin cap continually irrigated to extract maximum colour and some tannins. The ferment took place on medium toasted French oak planks helping to integrate soft oak flavours into the resulting wine. The wine was pressed at 2 Be and finished ferment and undertook malo lactic fermentation on fresh French oak where it remained for 4 months prior to bottling.

A medium bodied, deep red wine packed with blackberry and autumnal fruit. Typically Australian this bold Shiraz shows enticing black pepper and hints of spice gently cloaked in soft tannins.

Serving Suggestions: Serve on its own or with rich red meat dishes such as lamb or beef or with a selection of mature hard cheeses.

The must was cold soaked prior to fermentation to allow acidification of flavours from the berry skins. The ferment took place in stainless steel static fermenter's with skin cap irrigated automatically every 2 hours. The wine was then pressed onto French oak planks and allowed to go through malo lactic fermentation in contact with oak to help integrated the oak flavours and tannin. Further maturation on oak for 3 months prior to bottling.

A medium bodied, deep red wine with enticing red berry aromas, this Merlot shows ripe damsons and blackberries with hints of tobacco and spices on the palate. Gentle tannins give structure and backbone to this voluptuous wine.

Serving Suggestions: Serve on its own or with roast meat dishes such as lamb or beef or with a selection of mature hard cheeses.

The Coonawarra region of South Australia was selected for the Hungerford Hill Cabernet Sauvignon. The grapes for this wine are hand picked in excellent condition from specially selected vineyards. The 2004 vintage was great producing grapes with intense varietal flavor. Dark ruby red in colour, the wine has aromas of blackberry and plum.

NOSE
The nose shows complex aromas of blackberry and plum.

PALATE
The palate is full bodied with rich fruit flavours, with great tannin structure and excellent length.

PEAK DRINKING
